Two classical forms of production are predominant among pretzels: The dough machine method and the patented technique (Patent No. EP0882399E1) where polygons are cut out of a sheet of dough, rolled into a cylinder, and then formed with the pretzel cord board. The dough sheet variation is technically more complex but better suited for 3-shift operations where the machine can't be shutdown for cleaning purposes. FRITSCH supports both types of operation and can integrate existing machines into the pretzel line.

The central focus of pretzel production with the pretzel line is looping. The artistic looping and twirling of the finished pretzel cord by a machine that a few short years ago was not considered feasible. FRITSCH was also able to crack this nut and presented the MULTITWIST system that can loop more than 12,000 pretzels in an hour.
At this time FRITSCH is the only worldwide supplier of a fully automated pretzel line of this magnitude.
